WHITE FISH Dry on a paper towel. With a sharp knife, remove the blood line (thin reddish layer). Cut the fish into 1/4-inch cubes and place into a bowl.

SALMON Dry on a paper towel. Remove the skin (skin-side down, hold one end firmly and slide the knife between the flesh and the skin). Remove the blood line. Cut into 1/4-inch cubes and add it to the bowl.

SEASONING In the fish bowl, add: the chives (slice finely), 1/2 of the olive oil, 2/3 of the salt, 2/3 of the pepper and the juice of the lemon. Mix well. Place the bowl in the fridge for 15 min (mix every 5min). Meanwhile...

SALAD In another large bowl, add: the salad (remove the stem), the shallots (chop finely), the remaining salt, the remaining pepper and the remaining olive oil. Toss well.
